The key in which many bloggers use to be able to keep up with one more posts per day is to really blog the way you talk. Its easy to talk right?
In fact, blogs need to be conversational in nature, in order to attract repeat traffic. The conversational style puts a personality on the blog! So use more exclamation marks, questions marks, smilies :) and post opinions the way you normally say it. Don't even think about writing your blog in a formal style. Blogs don't work that way.
To start, you might want to even speak as you type - this is great way for you to get used to the conversational style of writing.
With this in mind, you can relax as you type, don't crack your brains over the writing style. This way you can go on to post 3, 4, or even 5 posts a day!
